I always thought Admiral McCoy in “Encounter at Farpoint” was retired and just visiting the Enterprise as a guest; he simply didn’t give me the impression of being on active duty. Also, in “The Undiscovered Country” he was “due for retirement” in 3 months before “killing” the Klingon Chancellor.
No argument about Boyce and Piper. (Except, maybe… I don’t think we know their ages. They could be younger than they look. :))
These freighters are a little better crewed and equipped than we were led to believe in TAS.
I can’t tell if starfleet doesn’t have a retirement age or that’s an alien.
Judging from Dr. Boyce, Dr. Piper, and Admiral McCoy, no.

Maybe it is just the Starfleet doctors that live — I mean SERVE — forever…
